White Chicken Chili

 

1 onion chopped

1 jalapeño diced ( or more for heat level). 

2-3 chicken breast- Note: I use a rotisserie chicken.  I add the chicken with bone and later take the chicken out, cool, de bone, then throw back in the crock pot in chunks. It states to shred  the chicken. But I am a lazy cook, so precook and cubed the bigger parts.

2 cans northern beans drained.  I wash the beans.

1 can of corn, drained

1 can of green peppers (4 oz)...often place on the side for personal preference

1 packet of Taco Season

3 Tablespoons of chopped garlic

1 box of low sodium chicken broth. I am not a fan of salt.

 

I throw it all into the crock pot and cook on low for 3 hrs.  Your crockpot may cook differently.  But most everything is already cooked.  If you use raw chicken, 5-6 hours.


One hour before serving add

1 brick on cream cheese

1 cup of cheddar cheese

1 cup of Monterrey cheese

Cook 1 more hour If you like, top with some tortilla chips, cheese
